Yummylicious Pancakes

Pancakes are sinfully delicious but too much can be just downright unhealthy. What if you have an option of choosing a healthier pancake? Will you take that chance? This pancake recipe only requires three easy-to-find ingredients! It’s perfect for beginners and even children to make, under supervision ofcourse. Did I mention that this pancake recipe is also gluten free, flourless and low calorie? What a combination! Now, you get to enjoy eating your favorite breakfast food as well as have a healthy body! Money is saved on the unnecessary ingredients and so is time! Below is the recipe for this mighty easy yummy pancake :


3-Ingredient Banana Pancakes Recipe
For 1 person (10 mini pancakes)

Ingredients
1 1/2 large bananas, ripe to overripe (200g) *
2 eggs
1/8 teaspoon baking powder
Maple syrup, butter, blueberries, to serve (optional)
* Don’t add too much banana. The pancake will not hold. There should be enough egg to hold mashed banana together.

Directions
First, crack 2 eggs in a bowl and whisk to break.
Then in another bowl add in 1 1/2 large bananas and lightly mash with a potato masher or a fork, but not too much. There should be chunks of bananas to make fluffy pancakes. And use only ripe bananas.
Then add egg mixture and 1/8 teaspoon of baking powder into mashed bananas and stir to combine.
Now cook mini pancakes over medium low heat. 1 or 2 tablepoons for each. When the baking powder is activated, flip it over and cook for about one minute more. You can skip baking powder, but then it will feel like banana omelets rather than pancakes. Blueberries are always good with pancakes. And serve immediately when hot.

Creamy Mushroom Soup

INGREDIENTS:
1/4 cup butter
1 cup chopped shiitake mushrooms
1 cup chopped portobello mushrooms
2 shallots, chopped
2 tablespoons all-purpose flour
1 (14.5 ounce) can chicken broth
1 cup half-and-half
salt and pepper to taste
1 pinch ground cinnamon (optional)

DIRECTIONS:
1.            Melt the butter in a large saucepan over medium-high heat. Saute the shiitake mushrooms, portobello mushrooms, and shallots for about 5 minutes, or until soft. Mix in the flour until smooth. Gradually stir in the chicken broth. Cook, stirring, 5 minutes, or until thick and bubbly.
2.            Stir in the half-and-half, season with salt and pepper, and sprinkle with cinnamon. Heat through, but do not boil.

Fish Prep

They call it "sashimi". It is a delicacy among the Japanese and now also in other parts of the world. Salmon can be made into patties, pan fried, grilled, oven- baked and so much more. Here’s a healthy salmon recipe you can whip up for your family and friends in less than an hour! 


Garlicky Broiled Salmon and Tomatoes
Serves 4
Hands-On Time: 10m
Total Time: 15m

Ingredients
  • 4  6-ounce  pieces skinless salmon fillet
  • 4  medium tomatoes, halved
  • 2  tablespoons  olive oil
  • kosher salt and black pepper
  • 1/2  teaspoon  paprika
  • 8  sprigs fresh thyme
  • 4  cloves  garlic, sliced
Directions
1. Heat broiler. Place salmon and tomatoes, cut-side up, in a broilerproof roasting pan or on a rimmed baking sheet.
2. Drizzle with oil and season with ¾ teaspoon salt and ¼ teaspoon pepper. Sprinkle salmon with paprika. Scatter thyme and garlic over the top.
3. Broil until salmon is opaque throughout and tomatoes are tender, 8 to 10 minutes.
Tip
This simple preparation lends itself to a variety of fish. Try it with halibut or striped bass.
